Salted Caramel Date Balls

Such a yummy recipe if you have a sweet tooth (and the perfect way to get your 6 dates a day in if you’re in later stages of pregnancy!)

Ingredients:

  • 1 cup packed pitted dates (this worked out to be about 15 dates of the ones I had which were medium-sized)

  • 1/3 cup roasted unsalted cashews (I buy normal cashews and then roast them in a pan for a few minutes on each side)

  • 1/4 cup desiccated coconut

  • 1/4 tsp sea salt

Instructions:

Mix everything in a food processor or pulse in a blender until you get a dough-like texture. Roll into small balls. I made about 15 which meant there was roughly one date per ball. Put in the fridge to firm up and then enjoy!
